Spicy Thai Lemongrass Ginger Margarita

Ingredients for Spicy Thai Lemongrass Ginger Margarita

1 1 inch long fresh Thai Bird Chile, destemmed and slit lengthwise (if a less spicy cocktail is desired, the seeds may be scraped and discarded)
1 tbsp Lemongrass Cold Blended Paste
1 1/2 tsp Ginger Cold Blended Paste
45 ml lime juice, freshly squeezed
90 ml blanco (white or silver) tequila
30 ml Agave nectar
Lightly Dried Chili Pepper , for garnish
Lime wedges, for garnish

Procedure for Spicy Thai Lemongrass Ginger Margarita

  1. In a shaker or quart Mason jar, combine the chile, lemongrass, ginger and lime juice. Muddle the chile well.
  2. Add the tequila, agave nectar and 1 1/2 cups of ice. Shake vigorously for 1 minute
  3. Strain into 2 8-ounce Old Fashioned glass filled with fresh ice. Garnish with Lightly Dried Chili Pepper and lime wedges (optional).
