Pineapple Mint Caipirinha

Summer is almost here and this simple and easy to make Pineapple Mint Caipirinha will be the hit of your parties! Sweet, refreshing and very tasty. Who doesn’t love that?

Amazingly, the Pineapple Mint Caipirinha drink is prepared in an interesting way. By mixing the fruit and the sugar together! Then by adding the liquor. This is poured into a single glass, to serve one or usually a large crowd. It can be shared amongst people. Obviously, a drink this good is ought to be made more than once! So keep this recipe handy!

Although, both rum and Caprinha will be made from sugarcane-derived products. It’s fresh, fruity and just plain minty goodness! We also added a little secret ingredient iced lolly to make this drink more fun and fresh.

Ingredients

  • 1/2 cup fresh pineapple chunks
  • 2-4 mint leaves
  • 1 teaspoon sugar or sweetener, or to taste
  • 30 ml vodka, cachaça or sake (2 ounces is about 1/4 cup)
  • Crushed ice
  • 1 iced lolly bar (recomended : lemon flavour)

Directions

Using a muddler (or a wooden spoon), muddle the pineapple chunks, mint leaves and sugar/sweetener in a cocktail shaker.
Add the liquor and the ice and shake vigorously.
Serve in a rocks glass, over more crushed ice if desired.
Add the fruit bar, garnish with extra mint sprigs and enjoy!
